WILLIAMSBURG PUMPKIN FRITTERS 
1 egg
1/2 c. sugar
1/2 tsp. salt
1 1/2 c. canned pumpkin
1 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
2 tsp. pumpkin pie spice
1/2 tsp. ginger
1 tbsp. butter, melted
1 tsp. vanilla
Confectioners' sugar

Beat the egg, sugar, and salt until very light and fluffy. Blend in the pumpkin. Sift the flour, baking powder, and baking soda together. Beat into the pumpkin mixture. Add the spices, butter, and vanilla. Mix well. Drop by tablespoonfuls onto a well-greased hot griddle or fry in deep hot fat a teaspoonful at a time. Watch carefully - the fritters scorch easily. Sprinkle with confectioners' sugar. Makes 1 1/2 dozen.
