PORK CHOP SCALLOP 
4 pork loin or rib chops
Salt and pepper
1 pkg. scalloped potatoes
2 tbsp. chopped pimento

Trim excess fat from chops. Brown, season with salt and pepper. Remove chops from skillet. Empty potatoes and seasoned sauce mix into skillet. Stir in pimento and water and milk called for on potato package. Heat to boiling. Stir occasionally. Reduce heat, place chops on top. Cover and simmer 30 to 35 minutes, or until potatoes are tender.
