BUTTERSCOTCH CRUNCH COOKIES 
2 1/2 c. all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1 c. butter, softened
1 c. firmly packed light brown sugar
2 large eggs
1 tsp. vanilla extract
1/2 tsp. rum extract
1 c. chopped walnuts (about 4 oz.)
1 1/3 c. butterscotch morsels
1/2 c. semi-sweet chocolate morsels

Preheat oven to 350°F. Grease 2 baking sheets. Mix together flour, baking soda and salt. Beat together butter and brown sugar at medium speed until light and fluffy. Beat in eggs. Stir in vanilla and rum extract. Stir flour mixture into butter mixture. Fold in nuts, butterscotch morsels and chocolate morsels. Place on cookie sheet.

Bake cookies until lightly browned, 10 to 15 minutes.
