SAUSAGE BREAKFAST MUFFINS 
8 oz. bulk sausage
1 c. flour
1 c. cornmeal
1/2 c. grated cheese
1/4 c. sugar
4 tsp. baking powder
2 tsp. chives (optional)
1 c. milk
2 beaten eggs
2 tbsp. vegetable oil
3/4 tsp. salt

Sauté sausage and drain. Mix together eggs, oil and milk.

In another bowl combine flour, meal, cheese, sugar, baking powder, chives and salt. Add the liquid mixture to this and stir until moist. Fold in sausage. Fill greased muffin pans 2/3 full.

Bake 20-25 minutes in 425°F oven.
