FROZEN LEMON DELIGHT 
3 egg yolks
Grated rind of 1 lemon
1/2 c. plus 1 tbsp. sugar
1/4 c. lemon juice
1/8 tsp. salt
3 egg whites, stiffly beaten
1 c. whipping cream, whipped stiffly
3/4 c. crushed vanilla wafers

Combine egg yolks, lemon juice and rind, salt, and sugar together. Cook over low heat or in double boiler until thick; cool. Fold in egg whites and whipped cream.

Sprinkle 1/2 the crushed wafers in bottom of metal ice cube tray. Pour lemon mixture over crumbs and cover with remaining crumbs. Freeze.
