RAISIN - OATMEAL COOKIES 
1 c. sifted flour
1/2 tsp. baking soda
1/4 tsp. cinnamon
1 1/2 c. quick cooking oatmeal
2 egg whites, slightly beaten
1 c. brown sugar
1/3 c. oil
1/2 c. skim milk
1 tsp. vanilla
1 c. seedless raisins, cut up or grind raisins

Sift together flour, baking soda and cinnamon. Stir in oatmeal. Combine egg whites, brown sugar, oil, skim milk, vanilla and raisins. Add to flour mixture and mix well. Chill dough.

Drop by teaspoonful onto a non-stick baking sheet. Bake at 375 degrees for 12 to 15 minutes. Shorten baking time, chewy soft cookie; longer time a crisp cookie. About 36 cookies - about 35 calories each.
