CHOCOLATE MARSHMALLOW COOKIES 
1 pkg. chocolate chips
2 tbsp. butter
1 egg
1 c. powdered sugar
Vanilla
1 c. nuts

Melt chocolate chips and butter; set aside. Mix in bowl egg, powdered sugar, vanilla and nuts, then add chocolate mixture and 10 1/2 ounce bag miniature marshmallows. Divide in half. Spread coconut on wax paper and roll the roll in it. Wrap in wax paper and put in refrigerator. When cold cut in slices.

This is a simple recipe to make. Fantastic for my family. I am a diabetic and need some fast carbs to increase my blood sugar. My wife can't eat any wheat base foods. So for a fast sugar boost that is gluten free this is it!
