FLAKY BUTTER BRIOCHE 
5 1/4 to 5 3/4 c. flour
1/3 c. sugar
1 tsp. salt
2 pkg. yeast
1 1/4 c. milk
1/2 c. butter
2 eggs, beaten

Preheat milk and butter just until warm. In large bowl combine 3 cups flour, sugar, salt, and yeast. Add eggs and warm milk and butter mixture to flour mixture. Mix until moistened. Beat vigorously for 3 minutes. Stir in remaining flour to form stiff dough. (Dough will be lumpy.) Knead on floured surface until dough is smooth, about 2-3 minutes. Shape dough. It can be divided or braided or shaped into smaller rolls. Place on greased cookie sheet. Cover with a towel and let rise in a warm place until dough doubles in size, about 45 minutes. (Dough can be placed in a warm oven.) Brush top with milk. Bake at 350 degrees for 20-25 minutes until golden brown.
