MEXICAN MEAT LOAF | |
1 1/2 tbsp. vegetable oil 1 c. chopped onion 1 c. chopped red or green bell peppers 2 garlic cloves, minced 1 packet instant beef broth & seasoning mix 15 oz. ground beef 4 oz. cheddar cheese, shredded 3/4 c. dried bread crumbs 1/2 c. tomato sauce 1/4 c. plain yogurt 2 tbsp. chopped parsley 2 tsp. Worcestershire sauce 1 tsp. chili powder Dash of pepper Preheat oven to 375 degrees. In a 9" skillet, heat oil over medium heat; add onions, peppers, garlic and broth mix. Saute until onions are translucent. In a medium mixing bowl, combine sauteed vegetables with remaining ingredients. Shape mixture into a loaf and place in an 8"x8" baking pan. Bake until brown, about 45 minutes. |
