BANANA BUTTERSCOTCH OATIES 
A healthy yummy cookie to satisfy that sweet tooth!! The bananas give them a nice sweetness and you can completely leave out the honey if you want less sugar. You could also leave out the flour and up the oats to 2 1/4 cups.

2 cups rolled oats
1/4 cup whole-wheat flour
1/8 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
2 tbsp. vegetable oil
2 tbsp. apple sauce
2 large very ripe bananas, mashed
2 tbsp. to 1/4 cup honey (depending on how sweet you like)
1 cup butterscotch chips

Preheat oven to 400°F and move rack to top half of oven.

Stir together first 5 ingredients. Pour in oil and apple sauce to coat. Combine bananas and honey and pour into oat mixture until well combined. Stir in butterscotch chips.

Drop by heaping tablespoon-fulls onto an ungreased cookie sheet. Flatten each into a circle.

Bake at 400°F for 11 to 14 minutes or until bottoms begin to brown. Cookies will be soft and chewy. Mmmmmmm!

Makes about 1 1/2 dozen cookies.
