BROCCOLI CASSEROLE 
1 lg. onion, chopped & sauteed in butter
2 pkgs. frozen chopped broccoli, thawed, but not cooked
2 cans mushroom soup
1/2 lb. Velveeta cheese
1/4 c. half & half
1 c. cooked white rice
Crushed crackers or bread crumbs, for topping

Cook together the soup and cheese until cheese melts. Add half and half and warm. Combine liquids with onion, broccoli and rice. Place in buttered casserole and top with crushed crackers or bread crumbs. Bake at 350 degrees until it bubbles, about 30 minutes.
