NEWBURG SAUCE | |
1/2 c. butter 8 tbsp. flour 2 c. milk 2 c. cream (med. or heavy) 4 beaten egg yolks 1/2 c. brandy, plain Melt butter in pan, stir in flour, salt, and pepper to taste. Add egg yolks stirring constantly. Add milk and cream. Stir until thick and smooth. Add brandy. Then add fish, lobster, scallops or whatever your choice is. |
