GRASSHOPPER PIE 
1 envelope unflavored gelatin
1/2 c. sugar, divided
1/8 tsp. salt
2 eggs, separated
1 1/4 c. milk
1/2 tsp. peppermint flavor
1 c. heavy cream, whipped
Green food coloring
Whipped cream, chopped pistachio nuts
Cherries

Mix gelatin, 1/4 cup sugar and salt in medium saucepan. Beat together egg yolks and milk; stir into gelatin mixture. Place over low heat, stir constantly until gelatin dissolves and mixture thickens slightly, about 5 minutes. Remove from heat; stir in peppermint flavoring. Chill, stirring occasionally until mixture mounds slightly when dropped from spoon.

Beat egg whites until stiff but not dry, gradually add remaining 1/4 cup sugar until very stiff. Fold into gelatin mixture; fold in whipped cream. Add enough green food coloring to make a delicate green shade, turn into chocolate crumb shell. Chill until firm. Garnish with whipped cream. Sprinkle with nuts and cherries.

CHOCOLATE CRUMB SHELL:

1 1/2 c. chocolate wafer crumbs
1/4 c. sugar
1/3 c. melted butter

Mix well. Pat into 9 inch pie pan. Bake at 400 degrees for 5 minutes.
