SCALLOPED FISH | |
2 lb. fillet or sliced haddock 1/2 c. coarse cracker crumbs 2 c. milk 3 tbsp. butter 2 tbsp. onion, finely chopped 1/2 tsp. salt 1/4 tsp. pepper 1/2 c. buttered crumbs or crushed potato chips Paprika Cut fish into serving pieces. Arrange fish and cracker crumbs in alternate layers in a greased casserole. Combine milk, butter, onion, and seasoning. Heat to scalding and pour over casseroles. Top with buttered crumbs or potato chips and a generous sprinkling of paprika. Bake at 350 degrees for 30 minutes or until browned. Yields 6-8 servings. |
