BAKED BEANS 
1 lb. navy beans
5 c. water
3 quartered onions
2 tsp. dry mustard
2 tbsp. sweet pickle juice or that from pickle chips or bread and butter chips
1/4 tsp. pepper
1/4 c. brown sugar
1/4 c. maple syrup
1/4 c. catsup
1 tbsp. salt
Additional pepper, if desired
Ham pieces

Cover beans with 3 cups water. Soak 8 hours or overnight. Then add 2 cups water and rest of ingredients, except ham and pepper. Boil, covered, about 1 hour or until skins of beans begin to wrinkle.

Alternate hot beans and ham at 1/2-inch intervals in a 2-quart bean pot. Sprinkle top generously with pepper. Bake 6-8 hours, covered, in a 250 degree oven. When beans are 2/3 baked, add about 3/4 cup water or enough to just cover beans. Uncover bean pot last 1/4 hour of baking. Serves 6-8.
