TUNA CHEESIES 
1 can tuna
1/4 c. chopped onion
1/4 c. chopped celery
2 tbsp. mayonnaise
1/4 tsp. salt
1/4 tsp. pepper
4 English muffins, halved
8 slices tomato
8 sliced cheese

Mix tuna, celery, onion, mayonnaise, salt, and pepper. Set oven at broil and 550 degrees. Spread muffins with butter and toast.

Spread tuna mixture on toast. Place tomato slice on each and top with cheese slice. Broil for 3-5 minutes or until cheese melts. Serve immediately. Makes 8 sandwiches.

My sister brought this recipe home from Home Economics in high school about 35 years ago. We've always made it using regular loaf bread. We'd toast it and then butter it and then add the rest. My family loves this. My daughter gets jealous if I make it when she's not around. Really good!!

Tuna Lorenzo as I knew it growing up in San Francisco, was a favorite of the late 50's, early 60's. I make it from time to time, especially for people who have never heard of it. It is the only way I like tuna heated :)
