OATMEAL BREAD 
2 c. boiling water
1 c. uncooked rolled oats
1/2 c. molasses
1 tbsp. butter
2 tsp. salt (optional)
1 pkg. dry yeast
1/2 c. lukewarm water
5 c. whole wheat flour

Pour boiling water over oats. Add molasses and butter; mix well. Let stand 1 hour. Soften yeast in lukewarm water. Add to oats mixture. Gradually add flour, one cup at a time, mixing well with wooden spoon. Cover bowl; let dough rise 45 minutes to 1 hour. Turn out; knead 1 to 2 minutes. Divide into 2 pieces and place in medium size, greased loaf pans. Cover and let rise for 45 minutes. Bake at 350 degrees for 45 to 60 minutes or until bread tests done. Cool on wire rack.
