HUNTER'S VENISON STEAK 
4 to 6 medium deer steaks
flour (to dredge)
1/2 c. shortening
1 large onion, sliced
2 to 4 c. water
1/4 c. flour
salt
pepper
cayenne pepper

Pound steaks to tenderize, then roll in flour and fry in a large skillet until well done. Remove from skillet and place in baking dish. Use skillet to brown onion. Pour water over the onions and blend in flour. Stir until thick. Season to taste with salt, pepper and cayenne. Pour over steaks in baking dish.

Bake in 350°F oven 30 to 45 minutes.

Serves 4 to 6.
