SWEET AND SOUR PORK 
1 lb. pork, 1 inch cubes
2 green peppers, 1 inch cubes
25 to 30 pineapple chunks

MARINADE:

1/2 tsp. salt
1/2 tbsp. soy sauce
1 tbsp. corn starch
1 tbsp. cold water
1 egg yolk
6 c. peanut oil
1/2 c. corn starch

SEASONING:

3 tbsp. vinegar
4 tbsp. sugar
4 tbsp. catsup
4 tbsp. cold water
3 tbsp. corn starch
1 tsp. salt
1 tsp. sesame oil

Soak pork in marinade at least 1/2 hour. Coat pork in cornstarch and fry in oil until done, about 2 minutes. Remove pork, reheat oil and fry once more until crisp. Remove and set aside. Drain all but 2 tablespoons of oil, fry pepper and pineapple, stirring constantly. Add seasoning mix, continuing to fry until thick. Turn off heat, add pork. Mix well and serve immediately.
