ASPARAGUS CASSEROLE BAKE 
1 lb. asparagus, cut into 2 in pieces
1 1/2 c water
1 1/2 c chicken stock
1 c uncooked long grain rice
1 small onion, thinly sliced
1/2 c red bell pepper, diced
1/2 c Parmesan cheese, grated
2 tbsp butter
3 cloves garlic, minced
1 tsp salt

Combine all ingredients in a 2 qt casserole and cover.

Bake in preheated 400°F oven 20 minutes. Stir; bake an additional 20 minutes.
