ACORN SQUASH AND APPLES 
Steam whole or split squash until tender. Cut up enough tart apples (Do Not Peel) to fill the cases. Sprinkle apples with 1 tablespoon honey, 1 teaspoon cinnamon and 1/2 teaspoon cider vinegar or lemon juice. Add to pulp (scooped out of acorn halves when tender). Bake at 375 degrees until apples are soft, but not mushy. Serve with mounds of cottage cheese for lunch or supper.
