MOLASSES MUFFINS 
2 c. flour
3 tsp. baking powder
3 tbsp. sugar
1/2 tsp. salt
1/2 tsp. ginger
1/4 c. shortening
1 egg, beaten slightly
1/3 c. molasses
3/4 c. milk

Sift dry ingredients together. Cut in shortening with knife until size of peas. Make a well in center. Add egg, molasses, and milk. Stir until just mixed. Fill well greased muffin pans 2/3 full. Bake at 400 degrees for 15-20 minutes.
