SALMON PATTIES 
1 (1 lb.) can salmon, undrained
1 egg, slightly beaten
2 tbsp. grated onion
2 tbsp. flour
2 tbsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper
Cracker crumbs
1/2 c. cooking oil

Combine salmon, egg, onion, flour, lemon juice, salt, pepper and 1/4 cup crumbs. Mix with fork until blended. Shape into 8 patties. Flatten slightly. Dip into crumbs. Fry patties in cooking oil until done.
