ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 c. coarsely grated zucchini
1 c. applesauce
3 tsp. vanilla
2 tsp. cinnamon
3 c. flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts

Cream sugar and eggs together. Gradually add other ingredients in order given. Grease and flour 2 loaf pans. Bake for 1 hour at 325 degrees. Cool for a few minutes in pans. Remove from pans and put on rack to finish cooling. Store well in freezer. This is a dark cake and very good.
