1 box yellow cake mix
1/2 c. coconut
1 stick butter, softened
1 egg
2 1/2 c. apples, sliced thin
1/2 c. sugar
1 tsp. cinnamon
1 (8 oz.) container sour cream
1 egg
Cool Whip or vanilla ice cream

Mix together cake mix, coconut, butter and egg. Spread in 9 x 13 inch greased pan. Bake at 350 degrees for 10 minutes. Mix sugar and cinnamon; place apples over crust and sprinkle with sugar and cinnamon. Beat together the sour cream and egg. Pour over apples. (I double this mixture.) Bake 25 minutes, should be good and brown. Serve topped with Cool Whip or vanilla ice cream.
