ACINI DE PEPE SALAD | |
1 c. acini de pepe noodles (prinz brand #20) cooked & drained 1 lg. can crushed pineapple, drain & save juice 1 lg. can chunk pineapple, drain & save juice 1 lg. can mandarin oranges, drain & save juice Maraschino cherries for color 1 (10 oz.) container Cool Whip, thawed 3 tbsp. flour 2 eggs 1/2 tsp. salt 1/2 c. sugar Cook and drain the noodles. Set aside. Next, into a saucepan pat: 1 3/4 cups juice from the drained fruit. Be sure to measure accurately. Add flour, eggs, salt and sugar. Boil until thick. Add to the cooked and drained noodles. Put in refrigerator overnight. Next morning, the noodle-sauce mixture will be very thick. Add the 2 kinds of pineapple, mandarin oranges and cherries to this and then fold in the Cool Whip. Refrigerate until serving time. Serves 12 or more generously. |
