CARAMEL APPLE COOKIES 
1/2 c. shortening
1 1/3 c. brown sugar
1 egg
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
1/2 tsp. nutmeg
1 c. grated raw apple, peeled
1 c. light raisins
1/2 c. apple juice
1 c. walnuts, chopped

Cream together shortening, brown sugar and egg. Add flour, baking soda, salt, cinnamon, cloves and nutmeg. Mix well. Add apple, raisins, apple juice and walnuts.

Drop by teaspoonfuls onto a greased cookie sheet and bake at 350 degrees for 12 minutes. Frost with caramel frosting. These cookies, when frosted, freeze very well, if you can get them into the freezer!

FROSTING:

1/4 c. butter
1/4 c. brown sugar
1 1/2 c. powdered sugar
1/2 tsp. salt
2 1/2 tbsp. light cream or canned milk

Cook butter and sugar until sugar is dissolved, about 3 minutes. Add remaining ingredients and beat well.
