CHICKEN TORTILLA CASSEROLE 
2 or 3 chicken breasts
2 tbsp. butter
1 bell pepper
2 or 3 cloves garlic
2 (12 oz.) jars salsa
5 to 10 corn tortillas (depends on size)
grated cheese (Monterey Jack and others; I use 3 cheeses, Monterey Jack, Mozzarella and Cheddar)

Cut chicken into cubes. Put in large skillet with butter. Cook a few minutes until chicken is white. Add chopped pepper and minced garlic. Heat 4 or 5 minutes until all is hot. Add salsa. Remove from fire. Tear tortillas in pieces. Layer with chicken mix and cheeses in baking dish.

Bake 30 to 35 minutes at 350°F. This freezes well.
