CHICKEN BROTH 
1 gallon water
1/2 chicken, deboned and cubed
1 bouquet garni of:
2 celery stalks, chopped
2 tsp. chopped parsley
3 tsp. grated carrots
3 tsp. chopped fine green peppers
3 tsp. chopped fine onions

Bring to a boil, then add: 1 tsp. salt 1 tsp. white pepper 1 tsp. black pepper

Simmer 10 minutes.

Variations: Add rice, spaghetti, beans.
