DRIED APRICOT CAKE | |
1 c dried apricots 2 c water 6 T sugar 1/2 c shortening 1 c sugar 2 egg yolks 1 tsp vanilla 1 3/4 c sifted cake flour 1/2 tsp baking soda 1 tsp baking powder 1/4 c water Simmer first 3 ingredients together 30 minutes. Mash and measure 1/2 cup pulp. Cream shortening and sugar thoroughly, add yolks and vanilla; beat. Sift dry ingredients together and add alternately with water and pulp. Bake in a cake pan (8x8 inches), lined with waxed paper, at 350°F for 45 minutes. |
