STUFFED TOMATO TUNA MELT | |
This recipe is great if you are on Weight Watchers, or if you are doing the South Beach Diet (Phase 1) where you can not have bread. It's a new twist on tuna melts. 4 to 6 large tomatoes (for stuffing) 2 to 4 slices Kraft fat-free American singles (depending on how many you make) TUNA SALAD: 1 (5 oz.) can tuna (or packet in water) 1/2 cup mayonnaise (low-fat) 1 tbsp. spicy brown mustard 1 tsp. sugar-free relish 1 tbsp. diced onions (I like red) 1 tbsp. diced celery Get a bowl and drain the tuna and place the drained tuna into the bowl. Next measure out the mayonnaise, mustard, relish, onions, celery and place them all in with the tuna. Mix well. Take your tomatoes, wash them good. Cut the top off and scoop out the inside of the tomato (I put the insides of the tomato in a storage container to save for other cooking needs). Once tomato insides are removed your tomato will look like a bowl. Fill each tomato with the tuna salad. Place the tomatoes onto a baking sheet and turn on your broiler. Place a slice of cheese on top of each tomato and put them under the broiler just long enough for the cheese to melt. Serve it on a plate and it makes a yummy lunch! Submitted by: April M.
