PEANUT BRITTLE | |
2 cups sugar 1 cup white syrup 1/2 cup water 1 lb. raw Spanish peanuts Butter, size of walnut Scant tsp. salt 1 tsp. vanilla 2 scant tsp. baking soda Boil sugar, syrup and water till it forms very hard piece when dropped in cold water. Add peanuts and stir constantly. Cook 10-12 minutes till mixture begins to turn brown. Add salt, butter and vanilla. Cook a little longer till mixture becomes a little darker. Then add soda. Mixture must be stirred quickly as it's removed from stove so it won't foam up and boil over. Pour on buttered cookie sheet. I don't flatten it much because all those little air bubbles keep it from getting too hard to eat. When cool, break into pieces. |
