SQUAW BREAD 
1 c. cornmeal
1 c. oatmeal
4-6 c. flour, unbleached
1 c. warm water
2 tsp. salt
1 c. bran
1 c. gluten flour
2/3 c. honey OR
1/3 c. honey and 1/3 c. molasses (for darker color)
3 pkgs. yeast
3 c. whole wheat flour
1/4 c. butter
4 c. water, boiling

Dissolve yeast in warm water. Pour boiling water over cornmeal and oatmeal; let stand until cool. Add honey, butter and salt to yeast mixture. Stir in bran and whole wheat flour. Add cooled cereal mixture. Then add unbleached flour a cup at a time until mixture is stiff enough to knead. Knead 10-20 minutes; let rise 2 hours. Then punch out air and shape into four loaves. Let rise for 1 hour. Then bake at 350 degrees for 45 minutes. When done, loaves should sound hollow when topped. Be careful not to under bake this moist, heavy loaf. Makes 4 loaves.
