STUFFED ZUCCHINI 
2 extra lg. zucchini
1 lg. ground beef
1 tsp. salt
1 tsp. pepper
1/2 c. chopped onion
2 c. shredded cheese
2 (8 oz.) cans tomato sauce

Cut ends off zucchinis and scoop out center leaving a thick wall. Chop up centers and set aside. Brown 1 pound ground beef, pour off grease. Add zucchini mixture, salt, pepper, and onions; cook 10 minutes. Stuff zucchini with beef mixture and place in baking pan. Pour tomato sauce over zucchini. Cover with foil, bake at 400 degrees for 30 minutes. Remove and place cheese on top; cook 15 minutes more and serve.
