SWEET POTATO PIE | |
2 c. all-purpose flour 2/3 c. butter-flavored vegetable shortening 3 sweet potatoes 3 eggs 1/2 lb. butter 1 c. evaporated milk 1 1/2 c. sugar 1 tsp. nutmeg 1 tsp. pumpkin pie spice 1 tbsp. coconut flavoring Whipped topping, if desired Prepare pie crust (do not bake). Cook potatoes. Mash until creamy, add sugar, butter, eggs, spice, coconut flavoring and beat until fluffy. Pour mixture into unbaked pie shell. Bake at 400 degrees for 35 to 40 minutes or until crust is browned. Set aside until cool. Top with whipped cream if desired. Makes 8 servings. |
