NO SUGAR-ALMOST NO FLOUR CAKE 
1 doz. eggs, separated
1/4 c. flour
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. lemon rind
2 tbsp. lemon juice
1 lb. pecans (ground fine)

Beat egg yolks with all the above ingredients except nuts until smooth. Add nuts.

In a separate bowl, beat egg whites until stiff. Gently fold egg whites into mixture. Pour into greased bundt pan and bake at 325 degrees for 1 hour and 10 minutes.
