SWEET SOUR PORK 
1/2 lb. lean pork, cut in 1 inch pieces
1/4 tsp. salt
1/2 tsp. pepper
1/2 c. all purpose flour
1/4 c. cornstarch
1/2 tsp. baking powder
1 beaten egg plus enough water to make 1/2 cup

Season meat with salt and pepper. Mix remaining ingredients to make batter. Dip pork pieces one at a time in batter and drop in hot oil. Fry until golden brown and well done.

SWEET SOUR SAUCE:

1/2 c. peeled, sliced carrots
1/2 c. green pepper, cut into pieces
1/2 c. well drained pineapple chunks
1/2 maraschino cherries, drained
3/4 c. sugar
1/3 c. ketchup
1 tbsp. soy sauce
1/2 c. apple cider vinegar
3 1/2 tbsp. cornstarch
1/3 c. water

Put carrots in saucepan in small amount of water. Boil one minute. Add green pepper, remove from heat, and let stand one more minute. Drain. Add pineapple and cherries. Set aside. In another saucepan put sugar, ketchup, soy sauce, salt and vinegar. Add 2/3 cup of water. Bring to a boil. Mix cornstarch with 1/3 cup of water. Gradually add cornstarch to ketchup mixture, stirring constantly. Cook until thick. Add vegetable mixture.

Pour sauce mixture over cooked meat and serve over rice.

Variation: chicken may be substituted for pork if desired.
