CHICKEN-IN-THE-VAN 
This is a Tillman Family's version of Chicken Divan. Will feed a family of 6. Serve with rice and salad. Yum!

2 whole skinless chicken breasts, boiled and cut in chunks (reserve broth)
1 bunch fresh broccoli, steamed until tender and cut up
1/2 round of Colby-Longhorn cheese, grated
The reserved chicken broth (season with a couple chicken bouillon cubes
and poultry seasoning)

In a large separate saucepan, melt a cube of butter. Add enough flour to make a very thick paste. Keep stirring to keep from burning. Use a whisk. Add some salt and pepper. To this, add a little at a time, the chicken broth. Make a thick gravy.

In a casserole layer first 1/2 the chicken, 1/2 the broccoli, 1/2 the cheese and cover with gravy. Repeat layers ending with the gravy. Cover and bake on 375 degrees for 30-40 minutes. Let sit about 10 minutes with lid off before serving.
