ALBACORE STIR-FRY | |
2 tsp. vegetable oil 1/2 c. chopped onion 1 lg. clove garlic, minced 4 c. thinly sliced assorted fresh vegetables (carrots, pea pods, bell pepper, broccoli, etc.) 1 can (12 1/2 oz.) solid white albacore in water, drained 3 tbsp. soy sauce 1 tsp. sugar 1 tsp. lemon juice 2 c. cooked rice Heat oil in skillet or wok and stir fry onion, garlic, and vegetables until crisp-tender, about 4 minutes. Add the rest of ingredients except rice. Stir fry about 1 minute. Serve over hot rice. |
