ZUCCHINI BOATS | |
6-8 med. zucchini, halved 1 lb. ground meat 1/2 bell pepper, chopped 1/2 onion, chopped 1/2 tbsp. olive oil 1/2 tsp. garlic, minced 2-3 tbsp. Italian seasoning 1 (12 oz.) can tomato puree 1 egg 1 (6 oz.) pkg. mozzarella cheese, shredded 1 (12 oz.) pkg. Swiss cheese, cubed 6-8 slices ham, cubed 1 sm. carton light cream (heavy may be substituted) Boil the zucchini. Drain, remove the pulp and save. Brown the meat, bell pepper, garlic and onion in the olive oil. Add the pulp, egg, ham and Italian seasoning to the meat mixture, then half of the tomato puree. Simmer 10-15 minutes and then add 2/3 of the cheese. Lay the zucchini shells on a 9 x 13 inch pan and spoon enough meat mixture into each zucchini shell. Spread the tomato puree over the zucchini, next the cream and finally the cheese. Bake in a 350 degree oven until the cheese melts. |
