SAUSAGE OREGANATO | |
2 lbs. Italian sausage (sweet with fennel) 1 lg. chopped onion 2 sliced green peppers 4 med. potatoes 2 tbsp. oregano Pinch or two of salt 1 tsp. pepper 1/2 c. grated Mozzarella 1/4 c. grated Provolone Bake the sausage in a little oil in a 350 degree oven in a large baking dish. Bake for 40 minutes, turning after 20 minutes. At the same time in a separate baking dish, bake the peppers, onions, potatoes which have been cubed, and some oregano. Toss the vegetables after 15 minutes. Combine sausage and vegetables in the large baking dish. You may add a 4-ounce or more can of crushed tomatoes (Redpack is a good label) now if you wish. Add the cheeses and pop back in the oven for 5 more minutes or until cheese is melted. Broccoli goes good with this. Serves 4-6. |
