GREEN TOMATO PIE 
6 med. green tomatoes
2 tbsp. water
1/2 lemon, sliced
1 c. sugar
2 tbsp. cornstarch
1/8 tsp. salt
1/4 tsp. cinnamon
2 tbsp. butter
2 pie crusts

Remove stems and cut tomatoes in thin slices. Cook tomatoes, water and lemon until almost tender. Drain and save juice. Add sugar to juice and add cornstarch and salt. Cook until thick. Add cooked tomatoes, cinnamon and butter. Put into pie shell and cover with top shell. Bake at 375 degrees until brown.
