HOPPIN' JOHN 
1 med. onion, chopped
4 slices bacon, chopped
2 1/2 c. hot water
1 can (15 oz.) black-eyed peas, drained
1 c. uncooked long grain rice
1 tsp. salt
1/4 tsp. pepper
Dash hot pepper sauce

In 2 qt. casserole, combine onion and bacon. Microwave at high for 5 to 6 minutes, or until bacon is crisp; stirring 2 times. Stir in remaining ingredients. Cover microwave at high 5 to 6 minutes or until mixture boils. Reduce to power level 5. Microwave for 20 to 25 minutes longer, or until liquid is absorbed and rice is tender. Let stand for 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
