CHRISTMAS PUDDING 
1 tbsp. Knox unflavored gelatin
1/2 c. cold water
1 sq. unsweetened chocolate or 2 tbsp. Hershey's cocoa
1/2 c. sugar
1 c. milk
1/4 c. chopped dates
3/4 c. seeded raisins
1/4 tsp. salt
2 egg whites
1/4 c. chopped nuts
1/2 tsp. vanilla

Soften gelatin in cold water for 5 minutes. Combine chocolate, sugar and milk in sauce pan and cook until chocolate is melted then add raisins, dates and salt; soften gelatin. Stir until gelatin is dissolved. Cool when mixture begins to thicken. Fold in stiffly beaten egg whites, nuts and vanilla. Turn into mold previously dipped in cold water. Chill. Unmold and garnish with whipped cream.
