DINNER MEAT BALLS 
1 lb. lean hamburger meat
1 tbsp. grated onion
1 egg
2 slices white bread
1/2 tsp. salt
1/4 tsp. pepper
1 med. onion, sliced

Hold a slice of bread under running water and just as the bread becomes too soggy to handle, dump it into a mixing bowl. Repeat for the second slice of bread. Add the meat, grated onion, egg, salt, and pepper. Mix well and divide into 6 portions (about a scant half cup each).

Melt some shortening (or use oil) in a large skillet such as an electric frying pan. When pan is hot, add meatballs. Note that mixture is not firm. Flatten slightly with spatula. Brown and turn meatballs. Add 1 medium onion, sliced. Cover and cook at low heat (about 225 degrees in electric pan) for about 30 minutes. Remove from pan and serve.

Option: To the watery onion mixture left in the pan, add about 1/2 teaspoon instant coffee and about 2 teaspoons ketchup. Add water, if necessary, and spoon mixture over the meat.
