HAPPY DAY CAKE 
2 1/2 c. cake flour
3/4 to 1 1/2 c. sugar
3 tsp. Calumet baking powder
1/2 to 1 tsp. salt
1/2 c. shortening
1 c. milk
2 eggs, unbeaten
1 tsp. vanilla

In bowl place flour, baking powder, salt and sugar. Stir shortening in bowl to soften. Sift in dry ingredients. Add 3/4 cup of milk. Beat 2 minutes at medium speed of mixer or 300 vigorous strokes by hand.

Add eggs, vanilla and rest of milk, beating 1 minute more or 150 strokes by hand. Pour into 2 (9 inch) layer pans lined on bottoms with paper or 8 inch layer pan. Bake 25 minutes at 350 degrees or use 13 x 9 x 2 inch pan and bake 30 to 35 minutes.
