BLENDER POTATO CASSEROLE 
1 c. milk
3 eggs
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
1 c. Cheddar cheese, cubed
1/2 c. green pepper, diced
1 sm. onion, quartered
4 med. uncooked potatoes, peeled & cubed

Combine all ingredients in a blender container in order listed. Cover and blend on high speed until potatoes go through the blades. Don't over blend. Pour the mixture into a greased 1 1/2 quart casserole dish and bake uncovered at 350 degrees for 50 minutes to 1 hour. 8 to 10 servings.
