SOUTHERN CORNBREAD 
1 egg
1 1/3 c. milk or 1 3/4 c. buttermilk
1/4 c. oil or melted shortening
2 c. self-rising cornmeal mix

Heat oven to 450°F. Grease 9-inch cast-iron skillet or 9-inch square pan; place in oven to heat.

Meanwhile, in a large bowl, beat egg. Add all the milk or buttermilk, the oil or shortening and the cornmeal mix. Mix well. Batter should be creamy and pourable. If batter is too thick, add more liquid. Pour batter into hot greased skillet.

Bake for 20 to 25 minutes or until golden brown.
