2 pkgs. soda crackers
3 tbsp. butter
1 onion
Salt and pepper to taste
2 c. half and half
1/2 c. milk
2 med. eggplants
3 or 4 drops of Tabasco

Peel and dice eggplants. Cook in boiling water for 10 minutes and drain. Saute onions in tablespoon of butter. Butter casserole and put layer of crushed crackers, layer of diced eggplant, layer of onions and another layer of crackers. Drizzle with butter, salt and pepper. Mix half and half, milk and Tabasco and pour over the top. Bake in oven 375 degrees for thirty to forty five minutes.
