ELEANOR'S HAM TETRAZZINI | |
1/4 c. butter 2 tbsp. cornstarch 1/4 tsp. salt Dash of pepper 1 1/2 c. chicken broth 1/2 c. real mayonnaise 1 pkg. thin spaghetti, broken in thirds, cooked and drained 2 1/2 c. cooked ham or chicken 1 c. sliced mushrooms 1/2 c. grated Parmesan cheese Melt butter in a saucepan over medium heat. Stir in cornstarch, salt, and pepper. Remove from heat. Gradually stir in broth. Bring to a boil, stirring constantly; boil for 1 minute. Stir in mayonnaise. Remove from heat. In a 2 quart casserole dish, arrange layers of spaghetti, ham (or chicken), and mushrooms. Cover with part of the sauce. Repeat layers until all ingredients are used. Sprinkle with Parmesan cheese. Bake in a 350 degree oven for 30 minutes or until bubbly. |
